Black Mountain Sparkling White 2015
In 2015 we had a very small harvest so were only able to produce around 300 bottles. Though the yield was low the quality of the Pinot Noir and Pinot Meunier was particularly good. The Chardonnay struggled with mildew and needed to be sorted to keep only the best clean fruit. The grapes were gently pressed to produce pure, crisp juice to undergo primary fermentation.
The second fermentation took place in the bottle and was allowed to rest on the lees for 18 months to gain its character and complexity. The result is a wine with great depth, you might find characteristics of citrus, grapefruit, pineapple and toasted hazelnuts. The wine is low sulphur containing less than 10mg/l and is suitable for vegans.

Black Mountain Brut Rose 2014
Our first sparkling rose was produced from our 2014 harvest and is a blend of Chardonnay and Pinot Meunier. Gentle whole bunch pressing gave us great purity in the juice, we thought that the Pinot Meunier was particularly special this year which is why we didn’t use Pinot Noir in this blend.
After pressing the wine under went a long cool fermentation before blending and tank ageing. The second fermentation took place in the bottle and then the wine rested on its lees for two years. The results are a wine of great elegance and purity. You may find characters of peach, apples and orange blossom. This wine is low sulphur containing less than 6mg/l. Suitable for vegans. Highly Commended South West Vineyard Awards.
