We produce 2 distinct delicious wines on our Herefordshire vineyard

Sparkling White 2016

In 2016 we were able to produce a clean crop of grapes reaching good sugar levels and crisp but balanced acidity. We were able to bottle a parcel of just over 600 bottles from this harvest. The second fermentation took place in the bottle and the wine was allowed to rest on the lees for 18 months. The result is a wine of freshness and elegance. You might find characteristics of citrus, baked apples and toasted hazelnuts. Low sulfur and vegan.

Sparkling Rosѐ 2017

2017 was also before we started our organic certification, however no herbicides or insecticides were used, and only minimal fungicides were sprayed. The grapes were picked by hand and lightly pressed. Light skin-contact was used to give the must a Provencal pink tinge. The juice was then allowed to settle and the clear must racked before fermentation. The wine was left on its lees in tank for 9 months. Bottled in summer 2018 and left to age for 18 months; in which time secondary fermentation took place. The bottles were riddled and disgorged by hand

The appearance is pale golden pink colour. The nose displays peach, citrus and orange blossom. On the palate you’ll find crunchy apple, lime and ripe peach.

Col Fondo 2018

2018 was our first year of organic conversion, therefore grapes were grown to Soil Association standards. The grapes, Siegerrebe, Pinot Meunier and Pinot Noir were picked by hand and fermented using natural yeast in stainless steel. We retained around 30% of the Siegerrebe skins to add further flavours and texture to the wine. The wine was then blended and aged in tanks before bottling. An addition of 8g/l organic sugar was made to spark fermentation in the bottle. No other additions were made. The appearance is a cloudy light amber colour. The nose offers enticing stone fruit and floral aromas. On the palate fresh peaches, apricot and elderflower with fresh acidity

Black Mountain Vineyard
